I am using Word 2003, SP2

I made my Heading 7 Appendix A. I want all tables in the in Appendix
to number sequentially A-1, A-2, A-3, etc.

This works until it reaches another Level 2 heading and then the
numbering starts over at A-1. I have toggled the field codes and
deleted the 7 after the s like this : { \* ARABIC \s } and that
works until I update the document, then it goes back to A-1. Any help?

You will have to create a separate caption label for use within your
appendixes. See

Yes, I have followed Shana's instructions. I have created a caption
for appendices and named it Appendix_Table.

Make sure not to apply Heading 1--Heading 6 to text in the appendix;
just use Heading 7--Heading 9. That way, numbering will be correct.

If, for some reason, you want to modify the field codes manually, you
cannot later use the Caption dialog box to insert new captions, since
Word will then try to undo the changes.

Well, you could use Headings 6--9 for appendix numbering. Of course,
this assumes that you need no more than five levels for the numbering of
body text headings.
